Ingredients

  • 2 Russet baking potatoes, cut into small cubes
  • 2 Large cloves garlic
  • Salt and pepper to taste

Directions

  1. Cut your potatoes into small cubes then place them in a bowl.
  2. Cover with water and allow them to soak for 2 hours, or more.
  3. Drain and rinse the potatoes.
  4. Pour about 2 inches worth of water into a large deep skillet and turn it to a medium high heat (about a 6).
  5. Toss in your garlic, once the oil is hot, and let it cook for about a minute.
  6. Throw in your potatoes and cook, tossing with a spatula every so often, and cook unit brown on the outside and soft inside.
  7. Salt about 5 minutes till they are done.
  8. After they are done, use a slotted spoon to take them out of the oil and place them on a paper towel to drain.
