Mini Marzipan Cakes with a hint of bourbon

Ingredients

  • 1 1/4 C. Almond meal
  • 1/4 C. Fine sugar
  • 1/4 C. Honey
  • 1 T Almond milk

  • 1 C. Confectioners sugar
  • 1 T. Almond milk
  • 1/2 T Bourbon
  • 3 drops Orange bitters

Directions

  1. Combine sugar and almond meal in a bowl.
  2. Pour in your honey and use your hands to combine.
  3. Add in the almond milk slowly and stir to combine until the mixture can be worked with but is still a little tacky.
  4. Break into pieces a little smaller than a tablespoon and shape as you want.
  5. Put the cakes on a cooling rack overtop of a lined baking sheet.
  6. Mix the confectioners sugar, almond milk, bitters and bourbon in a bowl and stir to combine.
  7. I used a sifter to make sure my icing wasn't lumpy and added in a little extra to make sure it was thick enough.
  8. Drizzle the icing over top of the cakes and allow them to sit for 30 minutes.
