Ingredients

  • 3 C chopped mixed veggies, including: carrots, peas, green beans, sweet potatoes and corn
  • 3 Medium potatoes, peeled and diced
  • 3-4 C water
  • 2 Tbs olive oil
  • 1 Tbs gluten free flour
  • 1/4 C + 1 Tbs unsweetened almond milk
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400.
  2. Add 1 tbs olive oil to large pot over medium heat.
  3. Add veggies and potatoes and saute for approximately 5 minutes.
  4. Add water and spices.
  5. Bring to a boil
  6. Stir together gluten-free flour, 1Tbs olive oil and approximately 1Tbs milk in separate bowl
  7. Pour into the boiling mixture and stir well
  8. Pour in 1/4 c milk and stir well
  9. Take down heat to low and cover. Let simmer for approx 20-30 mins while you make pie crust
  10. Pour mixture in baking dish and cover with pie crust
  11. Bake approx 35-40 mins

Tips

  • Cooking time may vary depending on your oven, watch for pie crust to be done in the middle - tapping with a knife will help to determine doneness.
  • For additional seasoning, you can add in rosemary, shallot salt/pepper, oregano, rosemary and/or Thyme. Feel free to play with it until it is to your liking.
