UM…NO…I SAID TAPAS NIGHT

I really love Tapas and was recently inspired, on my birthday of course, to put together a dinner of delicious small plates right at my own home.  While going out for tapas can be so much fun, with the experimenting and the sharing, it is quite expensive.  I made this delicious meal for under $30 and it filled us both up, and we had some to share with my lovely neighbor.  I served three courses starting with bacon wrapped goat cheese stuffed medjool dates, then pan fried potatoes and finished off with garlic and rosemary marinated lamb lollipops.

Ingredients

  • 8 Medjool Dates, pitted
  • 2 oz Goat Cheese
  • 8 Slices bacon

Directions

  1. Cut a slit in each date then remove the seed.
  2. Put as much goat cheese as you can inside the date.
  3. Wrap one piece of bacon around each date.
  4. Place on a baking sheet then bake for 5 minutes.
  5. Turn and bake an additional 10 minutes, or until crispy and brown.

Begin by preheating your oven to 400°F.

After you’ve removed the seed, just go ahead and fill up the dates.  It’s kind of messy, but well worth it.  Roll the bacon around the outside then place them on your pan.

After they have baked for about 15 minutes, you will have crispy delicious bacon wrapped around your dates.

Lovely!  And such a crowd pleaser.  I will definitely make these for the next party I attend.
