I’ve tried on several occasions to make oven baked fries that are crispy, as if they’ve been fried in oil, to no avail. But TODAY, I finally did it. Making these fries crispy involves a little planning ahead. The first step in making a crispy fry is (1) soak the potatoes in water for 2 hours, then drain and rinse them in a colander and pat them dry with a kitchen towel or paper towels. This process removes the starch from the potatoes and allows them to become nice and crispy. If you don’t soak out the starch, the potatoes will retain water and become soggy when baked. (2) Use a pan with holes or a wire rack. I purchased the AirBake pizza pan. Caution: If you use a pan like this, the oil will drip out through the holes. I lined the rack below the pan (about 3 inches below) with tin foil to catch the oil. This way, I avoided some nasty clean up after cooking was done.
When you use a pan with holes, or a rack, the air can circulate around the fries.
3 Russet potatoes
4 T Oive oil
1 T sesame oil
2 Cloves garlic
Salt to taste
Pepper to taste
Airbake pan or wire rack
What to do
Preheat the oven to 450 degrees F.
You can peel your potatoes if you’d like, but I leave the skins on. If you don’t peel them, scrub the potatoes then pat them dry. Using a mandolin set on 3/8 julienne setting, slice each potato into fry cuts.
Place your potatoes in a large bowl and cover with water. Allow the potatoes to soak for 2 hours. Drain the potatoes in a colander, then lay them out on a paper towel and pat dry.
Mix together the olive oil and sesame oil in a bowl and grate the garlic using a microplane into the oil.
Whisk these items together until combined. Place the potatoes in a ziploc bag and pour your oil mixture over top. Massage the oil and garlic mixture into the potatoes until they are complete coated.
Lay out the potatoes on your pan or wire rack and place them in the oven.
Remember, you do not want to season the potatoes with salt and pepper until they come out of the oven. Bake the potatoes for 30-40 minutes, until they are crispy and golden brown.
Put your potatoes in a bowl and season with salt and pepper. Dip in your homemade ketchup or sriracha mayo (recipe to come).
