Tomato and Mozzarella Tostadas 

This week I’ve been attempting to make some new dishes so on the off nights, I’ve been the queen of very quick very simple foods.  By no means did I make this up myself and I haven’t perfected it per se.  But when you are in a pinch and craving something fast and relatively healthful, look no further than this!

A quick trip to my local whole foods and I have every thing I need.  A small tub of the mini multi colored heirloom tomatoes, some fresh mozzarella, basil, balsamic vinegar and a little oil sliced up on top of some toasted ciabatta bread.

Slice up the tomatoes into circles that are about 1/8 inches thick and layer them with the mozzarella slices, about the same thickness. Top with some fresh torn basil then drizzle the oil and vinegar on top.

Absolutely delicious.  The last thing I did was grind some salt and pepper on top.  Perfect!  And the bread? Just toast in the broiler with a little olive oil rubbed on top until golden brown.
