Blackened Catfish Sandwich

This was a super simple, thrown together sandwich.  Made it quickly on a Monday night paired with my crispy oven baked fries and it was just a perfect salty, sweet wonderful treat.

For this version, I made the remoulade from scratch.  It’s pretty easy – mayo, mustard, Worcestershire sauce, garlic, paprika, lemon juice, celery…pop it all in the food processor and blend it up then put it in an airtight container till ready to use.  If you don’t have time for this, go ahead and buy some.  Easy enough.  I will certainly post this recipe in a future post.

I got these beautiful filets from whole foods. I’m telling you, they are amazing! They have somehow conditioned the behavior of the catfish and created a breed that TOP feeds.  AMAZING! The result is a super sweet, delicate piece of fish that doesn’t taste like dirt! You can’t go wrong with these fish.

Once your fish is golden brown, go ahead and take it out!

My buns were too small, so I broke the fish up and put it on there.  These pickles are a spicy garlic dill pickle.

The cool thing about a catfish sandwich is that it can be as simple or complex as you make it.  You can make the cajun seasoning from scratch, you can make the remoulade or buy it pre made.  Whatever you have time for, no matter what, this sandwich will win at any meal.

Keep checking in for the remoulade recipe…it’s up and coming and shouldn’t be missed.
