Chicken Wings

  • 1 lb chicken wing drummettes
  • 1/4 cup Bob's Redmill 1:1 baking flour
  • 1 Tablespoon cayenne pepper
  • Salt and pepper to taste
  • 1/2 cup tamari (gf soy sauce)
  • 1/4 cup maple syrup
  • 1/4 cup brown sugar
  • 1/3 cup bourbon


  1. Pre-heat oven to 450

    Combine tamari, maple syrup, brown sugar and bourbon in a small sauce pan and bring to a boil.  Turn temp down to bring to a simmer and let the sauce reduce for about 45 minutes.

    Put the baking flour, cayenne pepper, salt and pepper in a ziplock bag.  Put the chicken in the bag, zip it shut and shake to coat.

    Foil line a cookie sheet and place a baking rack over top.  Spray the baking rack with cooking spray, then place the coated chicken on top. 

    Bake at 450 for 25 minutes, turn them over and bake another 25 minutes.

    Put the chicken in a bowl and pour the thickened sauce over top.  Toss to coat, eat and enjoy.
