These delicious chicken wings are perfect for ANYONE! Whether they are gluten free, dairy free or just someone that loves a delicious plate of wings.
GF, DF Chicken Wings
- 1 lb chicken wing drummettes
- 1/4 cup Bob's Redmill 1:1 baking flour
- 1 Tablespoon cayenne pepper
- Salt and pepper to taste
- 1/2 cup tamari (gf soy sauce)
- 1/4 cup maple syrup
- 1/4 cup brown sugar
- 1/3 cup bourbon
Pre-heat oven to 450
Combine tamari, maple syrup, brown sugar and bourbon in a small sauce pan and bring to a boil. Turn temp down to bring to a simmer and let the sauce reduce for about 45 minutes.
Put the baking flour, cayenne pepper, salt and pepper in a ziplock bag. Put the chicken in the bag, zip it shut and shake to coat.
Foil line a cookie sheet and place a baking rack over top. Spray the baking rack with cooking spray, then place the coated chicken on top.
Bake at 450 for 25 minutes, turn them over and bake another 25 minutes.
Put the chicken in a bowl and pour the thickened sauce over top. Toss to coat, eat and enjoy.
The sauce used for these wings is both gluten and dairy free, just make sure you buy a whisky that is gluten free. Jack Daniel’s and Maker’s Mark are 2, just as a suggestion. I get the sauce rolling, and to a simmer before starting the wings, that way it has plenty of time to reduce. You will know it’s done when you can dip the back of a spoon in the sauce and the lines don’t move when you trace your finger down the back.
I use the ziplock back trick for easy clean-up! Once the wings are coated, you just toss out the bag. There may be a little flour left over in the bag, that is ok! And you can adjust the amount of cayenne, salt and pepper if you’d like to! Make them spicy, that will go well with the sweetness of the sauce.
Again, foil line the cookie sheet for easy clean up! And don’t forget to spray the baking rack.
